Catfish Plus: Keep it simple

The food at Catfish Plus is simple Southern delicacies like fried catfish, shrimp, oysters and chicken nuggets.
This year, two locations of Catfish Plus have opened in Lauderdale County. The first opened in January on Highway 19 North in Collinsville and the other in May on U.S. 45 North in Marion.
Another franchise of Catfish Plus is scheduled to open in West Meridian in a few weeks and a new location just opened in Philadelphia. Owner Randy Chesney said he is pleased with the response.
Wanda Clay, manager of the Marion Catfish Plus, said business has been steadily increasing.
The eatery is housed in a trailer that is 81⁄2 feet by 30 feet. It is equipped with six fry stations, two refrigerators and a freezer.
Catfish Plus is open Thursday through Saturday 11 a.m.-2 p.m. for lunch and 4 p.m.-8 p.m. for dinner. Customers walk-up, place their order at a large window, sit at a nearby picnic table and wait a few minutes for their food.
Catfish, shrimp, oyster and chicken nuggets are served with a mound of french fries, hush puppies and cole slaw. The eatery also serves boiled shrimp, a fish sandwich and hot apple pie.
Clay said customers at Catfish Plus are mostly people who work and live in the area. She attributes the eatery's success to customers who want something different for lunch or dinner.
