What’s cooking Suzanne?

This week we are looking at some light recipes that can help us stay slim and healthy.
The recipes are good and quick and the pork and kraut can be cooked in a crock pot. You have probably discovered that these recipes are also easy to prepare.
Many light recipes are. These recipes may be keepers for you.
Creamy Fruit Salad
1 c. drained pineapple chunks
1 c. drained fruit cocktail
1 c. shredded coconut
1 c. miniature marshmallows
1 c. cottage cheese
1 c. sour cream (light)
Combine all ingredients except sour cream. Chill for several hours but do not freeze. Add sour cream 1 hour before serving. Yield: 10 servings
Low Calorie Casserole
1 small head cabbage
1 lb. lean ground beef (ground sirloin is leaner)
1 small onion
1/3 c. uncooked rice
1 can tomato soup
1 can water
Chop cabbage and place in a greased baking dish. Brown meat and onion and stir in rice. Pour on top of cabbage. Mix soup and water and pour over entire casserole mixture. Bake at 325 for 1 hour. Add more water if casserole is too day.
Diet Barbecue Chicken
4 boneless, skinned chicken breasts
1 can Diet Coke (any diet drink will do )
1 c. catsup
salt and pepper to taste
Mix Coke and catsup together in glass baking dish and add chicken that has been salted and peppered. Bake at 350 for 1 hour.
Pork and Kraut
4 or 5 lbs. pork loin roast
1 large onion
3 large cans shredded kraut
Place roast in roaster or any ovenproof dish with a fitted lid. Cook at 325 to 350 until meat is tender. Place kraut on top, leaving juice from meat in pan.
Chop onion fine and add to kraut. Cover and cook 3 to 4 hours. Check occasionally to see if meat has bone loose from bone. If so, remove bone.
Stir kraut and meat together. Will keep for several days in refrigerator. Makes good sandwiches.
Squash Dressing
3/4 c. self-rising flour
1 c. cooked yellow squash
1/8 t. onion slakes
1/2 t. sage
1/2 t. poultry seasoning
1 t. vegetable oil
Combine and mix ingredients except oil. Spoon into a small casserole dish. Drizzle oil on top. Bake at 400 for 30 minutes.
Lemon Pepper Potatoes
4 lg. baking potatoes, peeled
1 small onion, chopped
4 T. butter
4 T. lemon pepper
Chop potatoes into 1 to 2 inch cubes. Combine in baking dish with remaining ingredients. Bake at 350 for 45 minutes to 1 hour or until golden brown. Stir occasionally.
