What's cooking Suzanne?

Are you having trouble getting your family to eat their five fruits and vegetables a day? This helps your immune system and supplies all kinds of vitamins and minerals. Many fruits and vegetables can be fancied up to make them look appealing.
We are going to share some of these recipes with you.
Baked Pineapple
2 cans pineapple chunks
1/2 c. flour
1/2 c. sugar
2 c. grated cheddar cheese
Ritz Crackers, crushed
1 stick of butter or margarine
Empty pineapple chunks into baking dish. Sift flour and sugar together. Melt margarine and pour over pineapple. Sprinkle flour and sugar over pineapple. Pour one sleeve crushed Ritz Cracker over pineapple mixture. Sprinkle grated cheese on top. Bake at 325 until bubbly.
Baked Fruit
20 oz. cherry pie filling
20 oz. pineapple chunks
6 oz. dried apricots
12 oz. dried prunes
2 cans mandarin oranges
Mix together and cover with foil. Bake at 350 for 1 hour.
Broccoli Salad
1 large bunch of fresh broccoli, chopped into bite sliced pieces
1 small red onion, sliced thin
1/2 c. white raisins
1/2 c. pecans or walnuts
1/3 c. mayonnaise
1/2 c. sour cream
1/4 c. sugar
2 T. white vinegar
Mix together broccoli, onion, raisins and nuts in a salad bowl. Mix mayonnaise, sour cream, sugar and vinegar together and pour over broccoli mixture. Mix the night before if you would like and put in the refrigerator.
Easy Apple Turnover
2 Granny Smith or Yellow Delicious apples
1 pkg. or 8 crescent rolls
1 stick of butter or margarine
3/4 c. sugar
3/4 c. orange juice
Melt butter in pan (8"x8" or 2 quart square baking dish). Peel apples, quarter, and then slice quarters again. Wrap rolls around apple slices, roll in melted butter and place in the pan. Pour sugar and orange juice over dough and apples. Bake at 350 for 20 minutes or until brown.
Easy Potato Soup
1-32 oz. bag of frozen hash browns
1 c. onion, chopped
1 can chicken broth
3 c. water
1 can cream of celery soup
1 can cream of chicken soup
2 c. milk
salt and pepper to taste
Combine hash browns, onion, chicken broth and water in Dutch oven and simmer for 30 minutes. Stir in soups, milk, salt and pepper. Heat thoroughly.
Green Bean Casserole
1 c. milk
4 T. flour
8 slices cheese
1 stick butter
2 cans green beans drained
1 c. French fried onion rings
Mix milk, flour, cheese and butter and heat until cheese and butter are melted. Drain green beans and mix with cheese mixture. Place in casserole dish. Crumble onion rings on top and bake about 10 minutes at 350.
Lemonade
Juice from 10 to 12 lemons
4 c. sugar (boiled with water then cooled)
Mix lemon juice with sugar mixture. Pour into gallon jug and finish filling with water.
Party Sandwiches
8 oz. Cream Cheese
3/4 c. chopped pecans
1/4 c. chopped onion
1/4 c. bell peppers
3 T. pimento
1 T. catsup
3 hard boiled eggs, chopped
3/4 t. salt and pepper
Combine ingredients and spread on buttered bread.
