The day has almost arrived for us to make the best Thanksgiving meal ever. Family and friends will love you for it, and we have some more good recipes to make it happen.
The first recipe we are featuring is called Cheese Pennies. If you like cheese straws, this is a quick way to satisfy that taste with a new flair – and makes a wonderful appetizer.
Our next featured recipe is a way to prepare a good healthy vegetable dish with a wonderful taste. It is called broccoli Fettuccine Au Gratin.
If you don't think your crowd will eat broccoli . Try this one. It has a taste of its own.
Both recipes were featured recently in Southern Living.
Freddie Lee's Cheese Pennies
1/2 c. unsalted butter
2 and 1/2 c. grated Cheddar Cheese
1/2 t. Worcestershire sauce
1/2 t. hot sauce, to taste
1 c. all-purpose flour
Cream the butter at room temperature. Mix cheese and sauces and stir to blend. Slowly stir in the flour until just blended. Turn dough out onto a lightly flowered surface and shape into two pieces. Roll each section into a log shape – like a long breadstick measuring 1 inch thick. Preheat oven to 350. Slice each dough section into 1/4 inch coins and place on a lightly greased cookie sheet. If desired, press pecans into each of them. Bake 10 to 15 minutes until golden brown and lightly crisp.
broccoli Fettuccine Au Gratin
1 T. Butter
8 oz. fettuccine noodles
3 c. broccoli florets, blanched
1/2 c. chopped red bell pepper
1 (oz.) cream cheese, softened
1 and 1/4 c. Parmigiana-Riggiano cheese divided (or other cheese)
2 lg. eggs
1 t. minced garlic
1/2 t. salt
1/2 t. ground black pepper
1 c. whipping cream
Preheat oven to 350. Grease an 8×8 inch baking dish with butter and set aside. In a medium bowl, combine noodles, broccoli and red pepper. Spoon into prepared pan. In a medium bowl, combine cream cheese, 1 c. cheese, eggs, garlic, salt and pepper. Beat at medium speed with electric mixer. Stir in cream cheese mixture over noodle mixture. Top with cheese. Bake for 30 minutes.
Creamed English Peas
4 c. water
1(10 oz.) bag of pearl onions,peeled
1/2 t. salt
2 (16oz.) pkg. frozen peas
1/2 c. chopped red pepper
1/2 c. chopped yellow pepper
1/4 c. butter
1 t. minced garlic
2 T. all purpose flour
1 t. sugar
1/2 t. salt
1/4 t. ground black pepper
1/4 t. ground nutmeg
1 c. heavy whipping cream
In a large saucepan, combine water, onions and salt over medium- high heat. Bring to boil and cook for 5 minutes or until peas are tender. Drain vegetables and set aside reserving 3/4 c. cooking liquid. In a large saucepan melt butter. Add garlic and cook one minute. Add flour, sugar, salt, pepper, and nutmeg, stirring constantly for one minute. Gradually add reserved liquid whisking until smooth. Add cream and cook, whisking until thick. Add vegetables and cook one minute or until vegetables are heated through.

Other seasoning if desired
Have eye of round roast at room temperature. Sprinkle with coarse black pepper or other seasoning. Preheat oven to 500 and bake 5 minutes per pound. Turn off and do not open oven for 2 hours. Roast will be pink or medium-rare.
Cranberry Chicken Over Rice

6 to 8 chicken breasts (boneless, skinless)
1 (8 oz.) bottle French dressing
1/2 t. curry powder
1/4 c. brown sugar
1 c. whole-berry cranberry sauce
Salt and pepper chicken. In a saucepan, heat dressing with curry powder and brown sugar. Heat until it bubbles. Remove from heat and add cranberry sauce and stir. Pour over chicken. Bake, uncovered, for one hour at 350 or until chicken is done. Serve over rice.
Orange Slice Cookies-From Gifts in a Jar
1 jar Orange Slice Cookie Mix
1/2 c. butter or margarine, softened
2 eggs, slightly beaten
1 t. vanilla
Heat oven to 375. In a bowl cream butter, eggs, and vanilla. Remove the orange slice candies from the jar a set aside. Add cookie mix and set aside. Stir in candy. Drop by rounded tablespoonfuls onto greased cookie sheet. Bake for 12 minutes or more. Cool.

This is the mix to give in the jar:

3/4 c. sugar
1/2 c. brown sugar
1 and 3/4 c. all-purpose flour
1 t. baking powder
1 half t. baking soda
1 and 1 half. c orange slice candies, quartered and wrapped in plastic wrap
Layer the ingredients in order given into a wide-mouth 1 quart canning jar. Pack each layer in place before adding the next ingredient. M&M Cookie Mix
